Vegan banana bread is the perfect holiday gift for your close friends. It’s delicious, healthy (relatively), and comes from the heart. This year I’m making this bread for my beautiful friends Ali and her brother, Chris.
This bread is surprisingly easy with ingredients you probably already have around the house. Well, maybe not the molasses. At least that’s what I thought when I went out and bought some, only to find a bottle in the back of my pantry!
The original recipe is from Veganomicon, which I got as a Christmas gift from my awesome friend, Jessa.
Lower-Fat Banana Bread
2 large or 3 small very ripe bananas
1/4 cup applesauce
1/4 cup vegetable oil
1/2 cup packed brown sugar
2 tablespoons mild molasses
2 cups all-purpose flour
3/4 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
Preheat oven to 350 degrees F.
Mash bananas well, then whisk in applesauce, oil, sugar and molasses.
In a separate bowl, mix together flour, baking soda, cinnamon, nutmeg, and salt. Sift into wet ingredients. I don’t have a sifter but a mesh strainer worked great.
Fold over dough with a wooden spoon until the ingredients are just mixed.
Place in a greased 9×5 pan and bake for 45-50 minutes or until a knife inserted in the middle comes out clean. Remove from oven and let cool before slicing.
The smell of molasses and bananas is wonderful as it bakes and the bread itself is a moist, tasty treat to have with morning coffee, or just whenever.
