Frozen Burritos

Now that the spring semester has started, I foresee many nights like the ones last Fall where I relied on Wendy’s to fuel me during all day study sessions (and periods of laziness).

After a while, fast food really takes a toll on the wallet and the health. I gained weight, and even though I’ve never had more than the occasional pimple, come late December my pockmarked face almost horrified me more than the thought of Rick Perry as president. Almost.

To combat this, I’m starting to make meals in advance to freeze. Frozen burritos is my first venture, and I think they turned out pretty good.

To make them, I grilled two chicken breasts with fajita seasoning on a george foreman grill and cooked rice with diced jalapenos and red bell peppers. I combined the two with pinto beans and shredded cheddar in a whole wheat tortilla, wrapped the whole thing with foil, and tossed them in the freezer. There ended up being 8 total and it only took me about 30 minutes.

After 3 minutes in my stone age microwave, they are ready to eat.

Other frozen meals ideas:
– soup and chili in individual portions
– marinated meat for bulgogi in individual portions
– quiche
– veggie meatloaf
